1. Appetizer Treasure Box

Examples: Three dishes are offered daily from a selection including seasonal potage, shira-ae (white sesame dressing) with Shine Muscat grapes, horse meat tartare, vegetable terrine, etc.

2. Assorted Seafood Platter

Examples: Straw-grilled Spanish mackerel or bonito with pickled myoga ginger, Pacific saury with star anise, ginger oil and lemon zest, octopus with sudachi citrus and rock salt, aged white fish with kelp powder, tuna three-color rolls and sea urchin temari sushi... and other sashimi platters using seasonal ingredients.

3. Soup

Examples: Soups using seasonal ingredients such as scallop meatballs, pan-seared amberjack, and sautéed surf clams.

4. 2 kinds of hot dishes

Examples: Foie gras flan, fried mackerel, etc., warm dishes using seasonal ingredients.

5. Fish dishes

Examples: Grilled sweetfish with scales, pan-fried rockfish, pan-fried cod roe, and other fish dishes using seasonal ingredients.

6. Meat dishes

Roasted Hokkaido Wagyu beef or quail confit

7. Rice cooked in an earthenware pot with black truffles

A signature dish featuring generous use of black truffles.After enjoying it as is, pour the broth over it and enjoy it in the style of hitsumabushi (eel rice bowl).
