1. Tamatebako (appetizer box)
Examples: Choose 3 dishes from seasonal terrine, kumquat and mozzarella caprese, foie gras and sweet potato potage, horse meat tartare, etc.
2. Large seafood platter
Examples: Straw-grilled trout and bonito with grated daikon radish, Pacific saury and star anise with ginger oil and lemon zest, octopus with sudachi and rock salt, aged white fish with kelp powder, squid wrapped in red radish... and other sashimi platters using seasonal ingredients.
3. Hot dishes
Example: A platter of two warm dishes using seasonal ingredients, such as a flan of new onions and hairy crab, and spring rolls with lamb and eggplant achar.
4. Soup
Examples: Soups using seasonal ingredients such as scallop meatballs, pan-fried amberjack, clams, etc.
5. Fish dishes
Examples: Fish dishes using seasonal ingredients such as grilled golden-eyed snapper with scales, pan-fried fish eye, and meunière of whitefish milt.
6. Meat dishes
Examples: Roasted venison, beef cheek braised in red wine
7. Black truffle clay pot rice
A specialty dish made with a generous amount of black truffles.Enjoy it as is, then pour broth over it and enjoy it like hitsumabushi.
8. Dessert
Examples: Setoka mandarin orange savarin, strawberry and cherry blossom mousse, etc., desserts using seasonal ingredients.
